Chef Dania graduated from Universidad Politécnica Internacional, and received additional training in the art of pastries. She has held Executive Chef and Pastry Chef positions in restaurants throughout her homeland Costa Rica and has consulted for restaurants throughout the Americas. She has extensive knowledge of the local produce and loves to design menus around what is in season – blending traditional and modern techniques and flavors.
